Spicy Lentil Salad


  • 1.5 cups green lentils
  • 1 cup yellow lentils
  • 2.5 glasses of water
  • 200 g feta cheese
  • 5 tablespoons of dried tomato puree
  • ¼ bunch of parsley
  • Salt
  • Black pepper


Wash and drain the lentils with plenty of water and cook them until they soften slightly. Take a deep bowl. Crumble half of the cheese and add to the lentils. Add the dried tomato puree, finely chopped parsley, salt and pepper and let it cool for a minute or two. Remove to serving plate. Top with crumbled cheese and finely chopped parsley and serve.
