Homemade mayonnaise
- 2 egg yolks
- 1 cup of extra virgin olive oil
- 1 tablespoon of lemon juice
- half a teaspoon of sea salt
Take the eggs out of the refrigerator at least 3 hours before you start preparing the mayonnaise. While making mayonnaise, first whisk the egg yolks well in a glass bowl, add 1 tablespoon of olive oil and stir constantly. After mixing the oil and eggs well, add the remaining oil spoon by spoon and continue whisking. In this way, add all the oil, add vinegar, lemon juice and salt and mix well. It is ready to serve when it solidifies.
