Roasted Beets
- 4 medium red beets
- 1 medium sized onion
- 50 ml olive oil
- 50 ml of grape vinegar
- 4 cloves of garlic
- Salt
After washing the beets, put them in a pot and add enough water, vinegar and garlic to cover them, put them on the stove and cook until they are soft. Remove from the stove, drain the water and leave to cool. Peel the skins and chop them like backgammon dice.
Heat the olive oil in a pan. Add the chopped onions and fry them until they turn pink.
Then add the beets and fry for 2-3 minutes. Sprinkle with salt, mix and remove from the stove. After cooling, you can serve with garlic yogurt, if desired.
