Coconut Gluten-Free Cookies



  • 1 teaspoon of hazelnuts
  • 1 teaspoon of walnuts
  • Half a cup of coconut
  • 1 egg white
  • 1 tablespoon of maple syrup
For the top
  • Half a cup of chocolate chips

Process the hazelnuts and walnuts in a food processor until they reach the consistency of flour and place in a large mixing bowl. Add coconut, egg white and maple syrup and knead. Cut walnut-sized pieces from the dough and place them on a baking tray lined with grease-proof paper. Bake in a preheated 180 degree oven for 8-10 minutes. Take it out of the oven and let it cool. Melt the chocolate chips in a bain-marie and dip one edge of your cookies into the melted chocolate. Serve after the chocolate is frozen.
