Gnocchi di Ricotta
Gnocchi di ricotta is a traditional Italian variety of gnocchi, especially popular in Tuscany. Gnocchi is made with a combination of ricotta cheese, butter, shredded cheese, eggs, flour, nutmeg, salt, and pepper. The ingredients are mixed and made into gnocchi, then rolled in flour and scalded in boiling water.
When it reaches the top, it is taken out and served with butter and grated Parmigiano-Reggiano. If there is enough time, it is recommended to leave the mixture in the refrigerator overnight before turning it into small gnocchi.
