Spinach Souffle


  • 500 g spinach
  • 3 eggs
  • 1 teaspoon grated cheddar cheese
  • 2 spoonful butter
  • 1.5 tablespoons of flour
  • 1.5 teaspoons of milk
  • Salt
  • Black pepper


Separate the egg whites from the yolks. After sorting and washing the spinach with plenty of water, boil it in its own juice.

Take it off the stove and drain the water. Finely chop when cool. Fry the flour with the butter. Slowly add the milk and mash the flour and oil thoroughly.

Add salt, pepper and spinach and mix. When it is slightly warm, add the egg yolks and grated cheddar cheese.

Whisk the egg whites until they become snow-like and add. Grease the molds and transfer the mixture. Bake in the oven at 180 degrees. Serve hot.
