Kidney & Broad Bean Salad


  • 1 cup of broad beans
  • 1 cup of dried kidney beans
  • 1 red onion
  • Olive oil
  • Salt
  • Black pepper
  • Lemon juice
  • Dill
  • Fresh thyme


Boil the broad beans and kidney beans in separate pots until tender and drain. Take a large bowl and mix. Mix salt, pepper, olive oil and lemon juice in a separate bowl. Chop the onion in julienne and add it to the kidney beans and broad beans. Add finely chopped dill and fresh thyme and mix. Transfer to serving plate. Drizzle over the lemon sauce and serve.
