Julian Pea Puree with Vegetables

 

  • 400 g boiled peas
  • 2 cloves of garlic
  • 1 onion
  • 1 teaspoon of olive oil
  • Salt
  • Black pepper
  • Muscat
  • 2 carrots
  • 2 zucchini
  • 4 slices of bacon


Cut the onion into cubes and fry it in 2 tablespoons of olive oil until golden brown. Puree the peas and roasted onions in a food processor. Mince the garlic and sauté in 2 tablespoons of olive oil. Add the pea puree and mix. Add salt, pepper and nutmeg. Cut the vegetables in julienne and sauté in olive oil. Add the bacon slices and mix. Divide the pea puree into serving bowls. Place the sautéed vegetables on it and serve.
