Spicy Hot Chickpea Salad


  • 400 g boiled chickpeas
  • 1 red onion
  • 2 tablespoons of olive oil
  • 1 teaspoon vinegar
  • 100 g cherry tomatoes
  • 3 tablespoons chopped parsley
  • Salt
  • Black pepper
  • Cumin
  • Turmeric


Peel the onion skins and chop the juilenne. Cook the onions in olive oil until they caramelize. Add the cherry tomatoes and boiled chickpeas and cook for 5 minutes, stirring occasionally. Add vinegar, salt, pepper, cumin and turmeric and sauté on high heat. Add the chopped parsley and mix. Transfer the mixture to a serving plate and serve hot.
