Spicy Bombay Bean Salad
- 400 g Bombay beans (boiled)
- 6 tomatoes
- 1 onion
- 1 pinch of red pepper
- 1 green bell pepper
- 1 pinch of granulated sugar
- 4 cloves of garlic
- 4 tablespoons of olive oil
- 1 lemon
- 1 tablespoon of grape vinegar
- ¼ bunch of parsley
- Salt
- Black pepper
Chop the tomatoes, peppers and onions and put them in a deep bowl. Add finely chopped garlic, boiled beans, granulated sugar, salt and pepper and mix. Mix olive oil, vinegar, lemon juice and grated lemon peel in a bowl. Take the prepared salad on a serving plate. Drizzle the olive oil sauce over it. Garnish with finely chopped parsley and serve.
