Artichokes with Citrus Peels & Pistachio


  • 6 cleaned artichokes
  • 4 tablespoons of olive oil
  • 1 clove of garlic
  • 2 onions
  • Graded rind of half an orange
  • Grated rind of half a lemon
  • 50 g pistachio
  • Salt


Cut the cleaned artichokes into quarters and soak them in lemon water so that they do not turn black. Peel and chop the onion and garlic.

Take half of the olive oil in the pan and fry the onions and garlic for 1 minute on low heat. Add the artichokes and continue frying.

Season with salt. Add the finely grated citrus peels and fry for another 2-3 minutes.

Heat the remaining olive oil in another pan and fry the pistachios until they turn slightly pink. Sprinkle over the food and serve.
