Zucchini with Tomatoes & Onions



  • 4 zucchini
  • 3 tomatoes
  • 1 onion
  • Half a teaspoon of olive oil
  • 5~6 cloves of garlic
  • Salt
  • Black pepper
  • Red pepper
  • 5~6 sprigs of mint


Saute the chopped onion and crushed garlic in olive oil for 2-3 minutes.

Add the chopped zucchini and continue sautéing until slightly softened.

Add the diced tomatoes and season with salt and spices. Cook on low heat until the tomatoes are drained and the zucchini is soft.

Add the finely chopped mint and remove from the stove.
