Purslane Soup with Red Beans



  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon of tomato paste
  • 1 bunch of purslane
  • 5 cups of hot water
  • 1 cup boiled red beans
  • Salt
  • Black pepper
  • Red pepper

Saute the chopped onion and crushed garlic in olive oil until they turn pink. Add the garlic and fry until fragrant. Add the coarsely chopped purslane and hot water. Season with salt and spices and bring to a boil. Add the boiled red beans and cook for another 7-8 minutes and remove from the stove. Serve hot.
