Salad With Red Beans, Lettuce & Avocado

 



  • 1 cup boiled red beans
  • 1 teaspoon cumin
  • sea ​​salt
  • 1 lettuce
  • 2 avocados
  • juice of 1 lemon
  • 4 tablespoons of extra virgin olive oil
  • 1 tablespoon of chia seeds
  • 5-6 branches of purslane (flowers separated)

Sweeten the boiled red beans by adding cumin and salt. Chop the lettuce coarsely and put it in a serving bowl with the purslane. Slice the avocados into apple slices and pour lemon juice over them to prevent them from browning.
Arrange the avocados on the lettuce. Add the boiled red beans and chia seeds. Add the extra virgin olive oil and freshly ground sea salt and serve.
