Goat Cheese & Mint Omelet
- 300 g goat cheese
- 1 tablespoon chopped mint
- 2 eggs
- 1 teaspoon chopped red onion
- Salt
- Black pepper
Mix goat cheese with mint.
Beat eggs, red onion, salt and pepper; Pour into a medium skillet and cook for 1-2 minutes.
Sprinkle the cheese mixture on half of the omelet and cover the other half with a spatula. When it reaches the consistency you like, take it off the stove.
