Bean Meatballs with Celery
- 1 cup of haricot beans
- 2 boiled celery
- 1 onion
- 2 spoonful butter
- 1 egg
- 3 tablespoons of flour
- 2 tablespoons of grated cheddar cheese
- Salt
- Black pepper
To fry:
- 2 eggs
- 1 soup bowl of flour
- 1 soup bowl of cornmeal
- 2-3 sprigs of parsley
Soak the dried beans the night before. The next day, strain it and put it in a pot. Add enough water to cover and boil until soft. Strain the water and put it in a mixing bowl. Add the boiled celery and pass it through the blender until it reaches the consistency of puree.

Make long flat meatballs by lightly flouring your hands and breaking off walnut-sized pieces. Beat the eggs in a bowl. Dip the meatballs first in flour, then in egg, and finally in cornmeal and fry in hot oil. Take it on a paper towel and absorb excess oil. Garnish with parsley and serve hot.
