Tuscan White Bean Soup
- 2 cups dried white beans,
- 6 glasses of water
- 1 medium onion, chopped
- 6 cloves of garlic
- 1 bay leaf
- Salt
- 1/4 cup olive oil
- 1 tablespoon chopped fresh rosemary, for garnish
Rinse the beans well and place them on the stove in a large pot with the water, onion, garlic, and bay leaf. Let stand on very low heat for about 8 hours or until beans are tender.
Then put all the ingredients in the blender.
