Pantzarosalata
Beets are the main ingredient in this colorful Greek dish, which comes in two different versions. While the cooked beets are either covered in a yogurt-based dressing or simply flavored with vinegar, the entire dish can be made into a creamy, thick mash or as a regular salad with chopped beets.
Pantzarosalata is traditionally served whole, halved or garnished with crushed walnuts, and is most often consumed as an appetizer.
