Kongguksu

Kongguksu is a Korean summer classic that combines noodles with cold soy milk water. Traditionally, broth is made from scratch by cooking and pureeing soybeans, with the occasional addition of sesame or different nuts. The meal is usually prepared with somyeon noodles and finished with the addition of different toppings such as thinly sliced cucumbers or tomatoes.

Ice cubes can be added occasionally to cool the soup.
