Greek Salad
For salad
- 1 large cucumber, chopped
- 3 medium tomatoes, chopped
- 1 large red pepper, chopped
- 1/2 small onion, sliced
- A handful of fresh mint, chopped
- Desired amount of feta cheese, cut or crushed (optional)
For the Greek sauce:
- juice of 2 lemons
- 1 glass of extra virgin olive oil
- 1 teaspoon dried basil
- 1 small handful of fresh thyme
- 1/2 teaspoon of black pepper
- 1/2 teaspoon unrefined sea salt
Combine salad ingredients in a large bowl
In a jar, shake or mix all sauce ingredients. Pour over the vegetables and let sit for at least 30 minutes to allow the flavors to meld. Then it will be ready to eat.
