Greek Quinoa


  • 1 cup of quinoa
  • water 2 cups
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 onion, finely chopped
  • juice of 1 lemon
  • 1/2 teaspoon unrefined sea salt
  • 1 red pepper, chopped
  • 1/2 cucumber, chopped
  • 1 tablespoon of extra virgin olive oil

Cook quinoa according to package directions and let cool.

Combine basil, thyme, onion and lemon juice in a bowl. Add salt to the lemon-onion mixture and let it sit for 5-10 minutes.

When the quinoa has cooled, add the paprika, cucumber, and lemon-onion mixture. Then combine them all and serve.
