Mushroom-cauliflower with rice
- 1.5 cups (105 grams) of sliced mushrooms
- 1.5 cups (200 grams) of cauliflower rice
- 1 cup (30 grams) of spinach
- ¼ cup (40 grams) chopped onions
- 1 tablespoon of olive oil
- 1 sliced celery stalk
- 1 crushed garlic
- 3 tablespoons (45 ml) vegetable broth
- Salt, pepper and soy sauce to taste
Take a large skillet over medium heat and add the olive oil. Then add the onions and celery and cook for 5 minutes. Then add the garlic and cook for a few more minutes.
Then add the mushrooms and sauté until the mushrooms are cooked. Then add the cauliflower rice and add the remaining ingredients except spinach. Finally add the spinach and season with salt and pepper before serving the dish.
This recipe for two is perfect for your lunch or dinner.
