Vegan ceviche with avocado and cauliflower



  • One ripe avocado, cut into small cubes
  • A spoon of extra virgin olive oil
  • One cup diced cauliflower
  • One tablespoon of finely chopped jalapeno pepper
  • 1/3 cup chopped red onion
  • One tablespoon of fresh coriander
  • One tablespoon of lemon juice
  • Two tomatoes, finely chopped
  • 1/2 teaspoon of salt
  • A clove of garlic

Place the avocado, cauliflower, tomato, onion, jalapeno, garlic, coriander, lemon juice, salt and olive oil in a large bowl. All ingredients should be cut into small cubes to improve the consistency.

Mix everything together, being careful not to crush the food. It is best to use a kitchen spatula and make smooth rolling movements.

When ready, transfer to a serving plate and serve as a very cold appetizer or as an accompaniment. It is also possible to offer toasted bread to add a crispy touch to the preparation.
