Aloo Baingan (India)


Simple and delicious, aloo baingan is a dish made by cooking eggplant and potatoes with onions, tomatoes and various spices. Since aloo means potato and baingan means eggplant, the name of the dish indicates its main ingredients.

It is basically a type of sabzi (dry curry) usually served with flat breads like roti and naan. Aloo baingan is a popular Indian lunch commonly packed in lunch boxes in North India. Aloo baingan is said to be even better if made ahead of time because the flavors deepen as the dish rests.
