Oatmeal with Cheddar Cheese and Egg
- Half a cup of oats
- A little more than half a glass of water
- A pinch of salt and pepper each (even if you don't add salt as the cheese will be salty)
- 2 tablespoons of grated cheddar cheese (more can be added if desired)
- 1 teaspoon of coconut oil
- 1 teaspoon finely chopped red pepper
- 2 tablespoons finely chopped onion
- 1 large egg
If you are cooking on the stove: Boil the water and add the oatmeal. Then turn the stove to the lowest temperature. Let it cook for about 3 minutes, until the oats have absorbed all the water. Turn off the fire and add the cheese, salt and pepper and mix.
Heat 1 teaspoon (half a teaspoon) of coconut oil in a nonstick skillet over medium heat. Add the vegetables and cook for 2-3 minutes until soft. Add the cooked oats to the vegetables and cook on the lowest heat for 1-2 minutes. Then take it on a plate.
Put the remaining oil in the pan you removed the oatmeal, heat the pan on low heat and break 1 egg, fry it. When the white of the egg is now translucent, place the egg on the edge of the oatmeal and serve.
You can also add chopped walnuts, green onions and spices if you want.
